Where does this concept come from?
Artisanal Ice-Roll ice creams are made using a machine that functions like a refrigerator, capable of creating cold temperatures up to -30°C. This concept of frozen cuisine was created in Japan about ten years ago.
Having created a buzz, it quickly became popular worldwide, particularly thanks to tourists who discovered it in Southeast Asian countries, such as Vietnam and Thailand, where it is appreciated in street food.
In some regions of the world, people do not tolerate lactose well in cow's milk. That's why in Asia, in particular, cooks use ingredients like milk concentrate (palm oil) and very sweet additives to compose their ice cream.
